Salmon Rice

I call food like this type of food-- lazy people's healthy food.  
Why? because it is simple to put together, got healthy ingredients and can be cooked using microwave ♥


Salmon rice
ingredient - salmon, rice, kombu (seaweed), daikon radish, water, soup broth, rice wine, sugar, white pepper salt, salt, scallion (green onion).

Steps:
  • put the instant rice in microwave separately and let it cool as preparing other ingredients.
  • clean and cut daikon radish into thin slices, soak kombu in water (I used dried seaweed)
  • clean and chop scallions (does not need too much)
  • put salmon, radish, kombu into a bowl all together and add soup broth and water (used chicken broth) till it covers most of the ingredients in the bowl
  • add rice wine, sugar, white pepper salt and scallions 
  • stir and cover the bowl with plastic wrap or any microwavable safe cover (make sure to leave holes)
  • put it in microwave for 15-20 minutes (I put it for 10 minutes, stir the bowl evenly and then put it in for another 5-10minutes). Make sure the radish is soften and no longer bitter. 
  • take the bowl out and mix the rice into the salmon soup. (ratio is about half to half or little more rice so the excess soup will be absorb by rice)
  • add seasonings if the taste is still too subtle
  • chop some fresh scallions and put it on top (visual appearance)
for the amount, I use a technique called "eyeballing." LOL
Basically, if the ratio of all ingredients matches personal preference it'll be fine. 

it's healthy because you got fish (protein and fat), rice (carbohydrates), radish and seaweed and scallions (fiber, mineral and other nutrients). =P

It's so easy even cavemen can do it.  (they just need a microwave).
